초록
This study examines the validity and reliability of the concept of Other Customer Perceptions (OCP) in the context of Omakase restaurants, which are high-end Japanese restaurants specializing in sushi, where the menu is left to the discretion of the chef and operates in a bar-style setting. In such restaurants, customers sit side by side, creating an environment where they can be influenced by other customers. Using SPSS and AMOS, a total of 251 questionnaires were collected and analyzed. The results showed that the sub-elements of OCP, specifically the physical appearance and appropriate behavior of other customers, significantly impact the restaurant's image. Additionally, three hypotheses regarding the relationships between restaurant image, customer attachment, and word-of-mouth intention were analyzed. The findings revealed positive relationships in all three cases: restaurant image positively influences customer attachment, restaurant image positively influences word-of-mouth intention, and customer attachment positively influences word-of-mouth intention. These results suggest that the concept of OCP, previously studied in various contexts, can be academically extended to the dining industry. This study provides valuable insights for practitioners in luxury service environments, emphasizing the importance of managing customer perceptions to enhance overall restaurant image, foster customer attachment, and encourage positive word-of-mouth. It highlights the significant role of other customers' appearance and behavior in shaping dining experiences and lays the groundwork for future research and practical applications in customer management strategies within the luxury service sector.
