Abstract
This study quantitatively investigates how sodium chloride (NaCl) ion interactions affect the structural and rheological properties of oil-in-water nanoemulsions made with hydrogenated lecithin and fatty alcohols. We prepared nanoemulsions using high-pressure homogenization and assessed how fatty alcohol chain length, NaCl concentration relative to dilution water, and mixing ratios influence droplet size, distribution, aggregation, and hardness. Our findings revealed that variations in fatty alcohol chain length did not significantly affect mean droplet size. However, the addition of NaCl led to clear, concentration-dependent changes in aggregation and hardness, which varied according to the ratio of purified water used. Nanoparticle tracking analysis (NTA) showed that the dominant droplet diameter before treatment ranged from 80 to 91 nm, with a total particle concentration of approximately 7.93×10⁶ particles/mL. Following NaCl treatment, the size distribution shifted to 89–275 nm, and the mean diameter increased to 182.8 nm. Optical microscopy confirmed noticeable droplet enlargement and clustering under both 1:2 and 1:4 dilution conditions after adding 5 g of a 10% NaCl solution. Hardness measurements indicated the onset of structural changes at ≥0.1 g NaCl, with maximum hardness observed at 0.5 g NaCl combined with 5 g of purified water. Overall, these findings demonstrate that the hardness and microstructure of nanoemulsions can be manipulated solely through ion-interface interactions, eliminating the need for rheology modifiers. This insight offers a practical strategy for tailoring the texture of cosmetic products by adjusting salt concentration and dilution ratios.
