Abstract

This study examines the trends and fluctuations of Overseas Chinese–run Chinese restaurants in colonial Korea and their crisis-response measures. It divides the period into three phases—growth (1925–1931), contraction (1932– 1936), and decline (1937–1945)—and identifies key crisis factors (intensified market competition, anti-Chinese movements, and wartime economic controls) and their impacts. The number of Chinese restaurants rose sharply from 403 in 1914 to 1,670 in 1925, but experienced a temporary contraction following the Manbosan Incident and anti-Chinese campaigns, and then a rapid decline after wartime economic control policies were enacted post–Sino-Japanese War. In response, Overseas Chinese restaurateurs deployed multifaceted strategies: forming trade associations to maintain and reinforce industry order; localizing menus with indigenous ingredients and tastes and marketing via newspaper advertising; and establishing supply cooperatives to coordinate the procurement of essential ingredients.
