조선시대 필사본 한글 음식조리서 하심당가 음식법의 국어학적 특징

본고는 국어학적으로 분석한 연구가 없었던 조선시대 필사본 한글 음식조리서 『하심당가 음식법』을 고찰하였다. 『하심당가 음식법』은 전라도에서 발굴된 두 번째 음식조리서이므로 국어학적으로 살펴볼 필요가 있다. 본고는 『하심당가 음식법』의 필체가 처음부터 끝까지 동일하다고 판단하고 한 명이 필사하였을 것으로 추정하였다. 그리고 이 문헌의 국어학적 특징을 음식 방문명, 표기법과 음운, 어휘로 나누어 살폈다. 표기법과 음운 변화는 19세기 국어 또는 근대 국어의 특징을 보여준다. 어휘는 전라도 방언을 반영하거나, 다른 문헌에서 찾기 어려운 것이 출현한다. 결국 『하심당가 음식법』이 19세기 전라도 자료로서 국어학적 가치가 있음을 밝혔다.
Abstract
This paper studies Hasimdangga Eumsikbeop(하심당가 음식법), a Korean culinary manuscript in the Joseon Dynasty that has never been analyzed from a Korean linguistic perspective. Hasimdangga Eumsikbeop is second cookbooks discovered in Jeolla Province, so its Korean linguistic value must be revealed. Since the handwriting of Hasimdangga Eumsikbeop is identical from the beginning to the end, this paper assumes that Hasimdangga Eumsikbeop was written by one person. This paper examines the linguistic features recorded in this culinary manuscript in terms of notation, phonology, and vocabulary. The notation and phonological phenomena of Hasimdangga Eumsikbeop well show the characteristics of 19th-century Korean or modern Korean. Hasimdangga Eumsikbeop contains words that reflect the Jeolla dialect and words that are difficult to find in other literature. Ultimately, this paper showed that Hasimdangga Eumsikbeop has linguistic value as a 19th-century Jeolla Province resource.
