｢음식보｣는 18세기에 전라남도에서 필사된 한글 음식조리서이다. 이 문헌은 기존에 서지학이나 조리학의 관점에서 주된 연구가 이루어졌기에 국어학적 연구는 부족하였다. 본고는 18세기 필사본 한글 음식조리서 ｢음식보｣에 출현하는 어휘 중에서 명확한 의미를 파악하는 데 어려움이 있거나 희귀한 어휘를 소개하고 고찰하였다. 음식 재료명으로는 ‘거무양’, ‘마리즙’, ‘모쟝’, ‘슉률/슝뉼’, ‘슝’을 살폈다. 특히 ‘거무양’은 ‘거믜영’의 변화형으로 보고, ‘슉뉼/슝뉼’은 ‘숙률’로서 18세기에 다의어였을 것이라 판단하였다. ‘슝’은 소의 위장(胃腸) 특히 양(羘)이나 양지머리로 해석하였다. 음식재료명이 아닌 어휘로는 ‘ᄀᆡᆨ물’, ‘넌ᄌᆞ’, ‘두채’와 ‘셋채’, ‘ᄆᆞᆫ이ᄆᆞᆫ이ᄒᆞ다’를 살폈다. ‘ᄀᆡᆨ물’은 현대국어의 ‘객수’나 ‘군물’의 의미로, ‘ᄆᆞᆫ이ᄆᆞᆫ이ᄒᆞ다’는 ‘ᄆᆞᆫᄆᆞᆫᄒᆞ다’의 변화형으로 파악하였다. ‘넌ᄌᆞ’는 ‘연자(蓮子)’를 적은 것이나 문맥상 ‘연방(蓮房)’의 의미로 판단하였다.
Abstract
‘Eumsikbo’ is a Korean culinary manuscript transcribed in South Jeolla Province in the 18th century. As the first cookbook discovered in Jeolla Province, it has been studied from both philological and culinary perspectives. This paper introduces and analyzes rare words and words whose meanings are difficult to understand that appear in this culinary manuscript from a Korean linguistic perspective. For food ingredient names, we looked at ‘geomuyang(거무양)’, ‘darijeup (다리즙)’, ‘mojyang(모쟝)’, ‘syung(슝)’, etc. For rare words that are not food ingredient names, we looked at ‘gaekmul(ᄀᆡᆨ물)’, ‘neonjat(넌ᄌᆞᆺ)’, ‘manimanihada(ᄆᆞᆫ이ᄆᆞᆫ이ᄒᆞ다)’, etc. Through these vocabulary, this paper aims to elucidate the historical and Korean linguistic value of this culinary manuscript.
