Previous studies on the impact of remodeling in the foodservice industry have primarily focused on customer-centric outcomes, such as customer satisfaction, store image, and revisit intention. This study examined the relationship between remodeling cost investment and management performance (sales), and particularly noted that this is not likely to be a simple linear one relationship. To empirically analyze this relationship, we used a sample of 166 foodservice establishments(outliers removed) from the 168 companies that responded that they had recently remodeled at least once in the 2024 Restaurant Management Survey . To confirm the nonlinear structure in which the slope of the sales increase effect varies depending on the level of investment, we applied a natural cubic spline model. The analysis revealed a nonlinear structure in which the degree of contribution to sales growth varied depending on the investment level. By demonstrating that the sales increase associated with remodeling investment is not a simple linear relationship, this study offers practical implications for business owners in determining the appropriate level of remodeling based on investment efficiency. Furthermore, this study holds academic significance in that it attempts to expand the methodological scope of foodservice management research by presenting a nonlinear performance analysis approach utilizing spline model.
