A Study on the Influence of Foreigners’ Adaptability to Korean Food on Preferences for Each of Menus

This study researched the adaptability to Korean food with foreigners who reside in Korea due to marriage or immigration as subjects and analyzed what influence the adaptability has on preferences for each of menus following the result. The adaptability to Korean food appeared as the factors which are recognition on traditionality and excellence, familiarity with seasoning, visual wontedness, and familiarity with stimulative taste. And the adaptability to Korean food appeared to have meaningful influence on preferences for the kinds of soup and bulgoki, preferences for the kinds of kimchi and preferences for bibimbap and juk, and appeared not to have meaningful influence on the preferences for the kinds of noodles and mandu. Therefore it is thought that social support is necessary for foreigners’ adaptation to Korean food and improvement of food life, and it is thought that necessary are the globalization of Korean food and follow-up studies which contemplate the change of the food of our country in multicultural society and grope for the methods of academic and political research which are various and thoughtful.
