Abstract
In order to create a healthy coffee drinking culture, it will be a good medium to understand the chlorogenic acid content according to the coffee extraction method as well as the difference between the grade of green beans and roasting degree. In addition, by presenting the correct and healthy consumption selection criteria in the COVID-19 pandemic era, we hope to propose a healthy coffee drinking culture rich in antioxidants for a precious and healthy cup and revitalize home cafes. In this study, in order to compare and analyze the difference in the content of chlorogenic acid, an antioxidant, among coffee components, analysis of 10 samples according to the difference in coffee extraction methods was used. As a result, the content of chlorogenic acid was high in the order of cold brew, hand drip, and espresso extraction methods, and the results were reconfirmed that the relationship between chlorogenic acid content in each group was in positive (+) proportion to the extraction time. Based on 180 mL Americano, the maximum was 923.3 mL in the cold brew group and 208.8 mL in the Espresso Group Listretto menu. Using these results, employees can be mediated with product knowledge and converted into consumer purchases, consumers can form a proper and healthy consumption and drinking culture, and tourism industry officials can be provided with a clue to focus on developing new products that will lead the global coffee market.
