Abstract

This study aims to understand consumers' dietary patterns by considering both sustainability and convenience. To do this, consumers were categorized into groups based on their levels of sustainable and convenience-oriented food purchases. The study also compares the demographic characteristics and food consumption behaviors of these groups and examines the factors that influence sustainable and convenience-oriented dietary patterns. We analyzed survey data from 6365 primary food purchasers in a household and adult household members, using the “2022 Consumer Behavior Survey for Food” conducted by the Korea Rural Economic Institute (KREI). The analysis identified four consumer groups: indifferent, sustainable food preference, convenience- oriented food preference, and hybrid types. A cross-tabulation analysis revealed significant differences in demographic characteristics including gender, age, education level, monthly household income, type of residential area, and single-person household status across these groups. A multivariate analysis of variance (MANOVA) indicated significant differences in food consumption behaviors across the groups, including interest in sustainable foods, the importance of and efforts toward reducing food waste, health-seeking and taste-seeking food lifestyles, frequency of eating out, and frequency of using delivery and takeout services, sustainable dietary patterns, and convenience-oriented dietary patterns. A multiple regression analysis was used to explore the factors influencing sustainable dietary patterns. Age, education level, household income, type of residential area, interest in sustainable food, importance and effort in reducing food waste, health-seeking and taste-seeking food lifestyles, frequency of eating out, frequency of using delivery and takeout services, and consumer type were identified as significant factors. Similarly, the factors influencing convenience-oriented dietary patterns included age, education level, type of residential area, single-person household status, interest in sustainable food, health-seeking and taste-seeking food lifestyles, frequency of using delivery and takeout services, and consumer type. Based on these findings, the study provides both theoretical and practical implications and outlines its limitations and directions for future research.
