Abstract
Despite growing interests in vegetarianism and plant-based alternatives among consumers, many studies on vegetarianism and plant-based alternatives have been conducted from health and nutritional perspectives. This study aims to concentrate on consumers themselves who are the primary decision-makers in adopting vegetarian diets and consuming plant-based alternatives. By categorizing vegetarian respondents based on the types of practicing vegetarianism and their motives for adopting vegetarian diets, this research seeks to identify differences in consumer characteristics among these consumer groups. In addition, this study intends to explore the factors influencing consumer intention to consume plant-based meat alternatives. To validate the research questions, we used data obtained from the “2022 Consumer Behavior Survey for Foods” conducted by the Korean Rural Economic Institute(KREI) and analyzed the survey responses of primary food purchasers and adult members in their households. The results found significant differences across consumer groups based on the types of vegetarianism, namely strict vegetarian, vegetarian, semi-vegetarian groups. Notably, substantial distinctions were observed in many consumer characteristics among these groups. Among demographic characteristics, significant differences were evident in gender, age, residential area, monthly average household income, living in a single-person household. Additionally, in terms of personal characteristics, significant differences were found among these groups. Secondly, among consumer groups based on their motives for adopting vegetarianism, that is health-oriented, diet-oriented, and environment/animal welfare-oriented vegetarian groups, the results found significant differences in all demographic characteristics, including gender, age, education level, residential area, monthly average household income, and living in a single-person household. Furthermore, significant differences were found among these groups in terms of personal characteristics. Thirdly, it was confirmed that factors such as living in a single-person household, competence in consumer rights and interests, competence in consumer responsibility, interest in dieting, interest in domestically grown produce, interest in eco-friendly foods, health status, types of vegetarianism,, and awareness of plant-based meat alternatives had a significant impact on consumers’ intentions to consume plant-based meat alternatives. In conclusion, this study discussed strategies to enhance consumers’ sustainable dietary practices and consumption behaviors based on the research findings.
