Abstract
The purpose of this study was three-fold. First, this study identified consumer segments in the food market since the COVID-19 outbreak based on the level of change in food consumption expenditure through four different channels: offline, online, eating out, and delivery and take-out. Second, this study explored differences in characteristics across consumer segments. Third, this study examined how changes in food consumption expenditure across four different channels (offline and eating out vs. online and delivery and take-out) were related to each other. Data were taken from the “2020 Consumer Behavior Survey for Food” conducted annually by the Korea Rural Economic Institute. The sample was primary food purchasers in their household aged 20 to 59 years old. A total of 2,358 responses were used for the data analysis. Cluster analyses were performed using a combination of hierarchical and non-hierarchical clustering methods and four distinct consumer segments were identified: stick to existing way, increasing food consumption, untact consumption focused, and decreasing food consumption. Cross-tabulation analyses and multivariate analyses of variance were performed and significant differences were found across four segments regarding all demographic characteristics except gender; all sub- dimensions of agri-food consumption competence except agri-food labeling competence and agri-food information competence; food-related lifestyles; perceptions of food safety; and online shopping experiences for foods. The level of change in food consumption expenditure through offline and eating out was significantly associated with the level of change through online and delivery and take-out.
