Food, closely related to human survival, encompasses various attributes, among which taste stands out as a fundamental element. Taste not only brings pleasure but sometimes also discomfort. Particularly, “bitterness” represents a prominent negative taste, forming a binary opposition with “weetness”. This study focuses on “bitterness”, a taste with the most active negative semantic transition, within the broader category of “taste and expression”. The aim of this research is to examine the basic and abstracted meanings of bitterness from a cognitive linguistic perspective, analyzing their patterns and characteristics of semantic extension. It explores the linguistic commonalities and differences between Korean and Russian, considering the impact of taste perception on linguistic expression and examining the sociocultural universality and specificity. To achieve this, representative annotation dictionaries and corpus examples were utilized to identify semantic usage categories and extract analytical data. Moreover, the examination of research trends in domestic and foreign language-related academic circles reveals a lack of comparative studies on Korean and Russian taste languages. Therefore, it is deemed essential for future research to actively engage in comparative studies of taste languages between Korea and Russia.
