이 연구는 소비자들이 수산물을 구매할 때 어떤 품질속성을 가장 중요하게 인식하는지를 분석하는데 목적이 있다. 선행연구를 참조하여 총 10개의 수산물 품질속성을 도출하였다. 전국의 소비자 1,000명을 대상으로 설문조사를 수행하였으며, 품질속성의 중요성에 대한 평가는 최고-최저조정법을 이용하였다. 연구결과, 소비자들은 여러 품질속성 가운데 신선도를 가장 중요하게 고려하였으며, 다음으로 안전성, 맛(풍미), 가격, 외관 등의 순으로 분석되었다. 이러한 연구결과는 수산물 생산단계에서의 위생안전관리, 저온유통시스템의 구축, 수산물 품질인증제도 개편에 중요한 시사점을 제공하고 있다.
Abstract
The purpose of this paper is to analyze which quality attributes are most important to consumers when purchasing seafood. A total of 10 quality attributes for fish were derived by referring to previous studies on the quality attributes of aquatic products. A survey was conducted on 1,000 consumers nationwide, and the importance of quality attributes was analyzed using the best-worst scaling method. As a result of the analysis, consumers regarded freshness as the most important among the quality attributes of seafood, and safety, taste, price, and appearance were considered important next. These results suggest that hygiene management is required from the production stage of seafood, and it is urgent to establish a cold chain system in the entire distribution stage of seafood.
