Abstract

Global food system are in need of transformation to achieve the Sustainable Development Goals(SDGs) and the intervention of technology innovations can play an important role in enabling and accelerating food systems transformation. One example is cultured meat, which has recently been spotlighted by the livestock industry. However, the application of innovation in food industry is slow to socially accepted, as it is directly related to human life. Therefore research on innovation in food industry is needed from consumer's perspective. To this end, in this study, comments on online news related to cultured meat were collected and topic modeling and contents analysis were conducted. As a result, there are 13 dimensions of consumer perceptions of cultured meat, including whether to promote animal welfare, reduce environmental pollution, solve food shortage, health improvement, religion/belief and wealth, non-natural awareness, concerns about uncertainty, sensory dislike, market distrust, socioeconomic impact, technological ethical issues, and others. Among them, it was revealed that while there are dimensions in which positive and negative perceptions coexist, but there are also dimensions that are structurally different. In addition, it was revealed that consumers are considering the utility of cultured meat not only in the personal aspect but also in the social aspect.
