본 연구는 발리토속요리인 통돼지구이 ‘바비굴링’ 요리가 발리사회를 상징하는 대표적인 종족요리로 형성․정착되는 과정을 심층적으로 고찰한다. 발리는 이슬람사회 인도네시아에서 유일한 힌두교지역으로 일상과 의례에서 관행적으로 돼지고기를 소비한다. 바비굴링은 본디 신성한 ‘의례음식’이었으나 식민지화 과정, 국민국가로의 이행 과정, 관광의 맥락에서 국가와 발리사회 간의 상호작용 속에서 세속적인 ‘상업음식’으로 변모한다. 바비굴링은 정부 주도 하에 ‘국가통합’의 수단으로서 활용되었고, 또한 발리지식인 집단의 주도 하에 ‘문화관광’의 수단으로 지역홍보의 관광상품으로서 관광자원화 되면서 세속화되었다. 바비굴링은 발리사회의 희로애락을 담고 있는 ‘민족지적 대표성’을 띠는 중요한 물질문화적 요소이다.

Abstract

This paper examines how the Babi Guling (suckling roasted pork) has emerged as a representative ethnic food that symbolizes Balinese identity. The island of Bali is the only Hindu region in the Islamic society of Indonesia, where pork is consumed in daily life and customary rituals. The Babi Guling was originally a sacred ‘ritual food’ in the ancient Balinese society, but it has been transformed into a secular ‘commercial food’ in the contexts of Dutch colonization, nation-building and modern tourism. The Babi Guling was utilized as a means of ‘national integration’ under the government’s initiative. It was also secularized as an ethnic product to promote ‘cultural tourism’ in an ideological effort of Balinese intellectual groups. The Babi Guling is an ethnographic representation of the Balinese society and poses as a core element of Balinese material culture, which contains the joys and sorrows of the Balinese society.
