Abstract

The increasing popularity of boneless chicken in the domestic Korean chicken market has led to the common practice of using a mix of thigh and breast meat. Some brands, however, are leveraging the use of '100% thigh meat' as a strategy for quality differentiation. Nevertheless, there is a lack of empirical evidence regarding whether consumers can perceptually distinguish between these different cuts. This study investigated the effects of the cut of boneless chicken (thigh meat vs. breast meat) and the cooking method (fried vs. sauced) on consumers' cut identification accuracy and subjective taste evaluation. Eighty-eight university students participated in a blind tasting task in which visual information was blocked. The results showed that identification accuracy was relatively high in the fried condition but low in the sauced condition, and no significant difference was found in taste ratings between meat types. These findings suggest that sensory cues can be amplified or masked depending on the cooking method, which may complicate cut identification. Furthermore, even when cut identification is possible, this perception does not necessarily translate into a difference in taste evaluation. This study interprets the selection of cooking ingredients and cooking methods within the context of 'design of taste' and marketing, demonstrating that the perceived identity of taste and quality perception experienced by consumers can change based on the perceptual design of the cooking process, even with the same ingredients.
