초록

This study was conducted to investigate the preference and sensory characteristics of 8 strawberries cultivars grown in Korea. For this purpose, consumer acceptance was assessed using a 9-point hedonic scale, and sensory attributes were derived for each strawberries cultivar using the Check-all-that-apply (CATA) method. The evaluation of 15 acceptance items and 23 CATA items in 111 consumers revealed significant differences in the majority of items among the cultivars. Multiple factor analysis (MFA) was conducted to determine the relationship between acceptance and sensory attributes, and the results showed that the sensory attributes of ‘Intense strawberry flavor’, ‘Glossy’, ‘Sweet smell’, “Good seed texture’, ‘Big size’, ‘Hardness’, and ‘Juicy’ were positively correlated with overall acceptance. These characteristics were found to be related to overall acceptance. The samples associated with this were SB3, SB2, and SB8. As a result, it was found that strawberries grown in Korea have distinctive variety-dependent sensory attributes and are generally perceived to be highly acceptable. These findings will prove invaluable as a basis for the development of cultivars in line with consumer acceptance in the future.
