2차 준 이상 수요체계(QUAIDS)를 이용한한국 육류상품시장의 대체 관계 분석

초록

본 연구는 2005년에서 2015년까지의 가계 동향조사를 이용하여 가계에서 소비하는 쇠고기, 돼지고기, 닭고기, 소시지/햄･베이컨에 대한 수요체계를 분석한다. 수요 측면에서는 코로나로 인한 외식수요 감소, 공급 측면에서는 전염병 우려 인한 육가공 공장의 가동중단과 같은 현상이 관찰되고 있다. 이에 따라 생육의 수급 불안정으로 발생하는 가격 변동에 대해 육류상품 간의 대체관계를 확인해야한다. 이를 위해 완전수요체계인 QUAIDS를 사용하여 한국 육류소비자의 수요탄력성을 추정한다. 쇠고기, 돼지고기, 닭고기, 소시지/햄･베이컨을 추정한 결과 소득(지출)탄력성은 쇠고기, 돼지고기, 닭고기, 소시지/햄･베이컨에서 0.97, 0.67, 0.77, 0.79로 모든 육류에서 필수재의 성격을 가지고 있음을 확인했다. 비보상자기가격탄력성은–0.65, -0.73, -0.33, -0.79로 추정되었다. 교차가격탄력성 추정 결과 소시지/햄･베이컨의 경우 돼지고기와 닭고기에 대체재 관계가 성립하여 가공육이 생육 시장을 대체할 수 있을 것으로 보인다. 본 연구에서 추정한 육류 수요관계를 통하여 육류 충격에 대한 수요 정책 입안에 실증적인 자료를 제공한다.

Abstract

This study analyzes the demand system for beef, pork, chicken, sausage･ham and bacon consumed by households using household trend surveys from 2005 to 2015. In side of demand, in terms of supply and demand for restaurants due to COVID-19, such as the suspension of meat processing plants due to concerns over infectious diseases are observed. As a result, it is necessary to check whether alternative relationships between meat products will occur for price changes caused by unstable supply and demand of meat. To this end, the demand elasticity of Korean meat consumers is estimated using the complete demand system, QUAIDS. Estimates of beef, pork, chicken, sausage･ham and bacon show that income(expenditure) elasticity is 0.97, 0.67, 0.77, and 0.79, indicating that all meat has the nature of necessity good such as beef, pork, chicken, chicken, and sausage･ham/bacon. The uncompensated self-price elasticity was estimated to be -0.65, -0.73, -0.33, and -0.79. As a result of estimating the elasticity of cross-price, sausage･ham/bacon, the relationship between pork and chicken is established, so processed meat can replace the raw meat market. Empirical data are provided in the establishment of demand policies for meat shocks through the meat demand relationship estimated in this study.
