Abstract
Recently in China’s food service market, with the escalating cost of food ingredients, labor and rent, an increasing number of restaurants are turning to Meal Kit usage. As a result, the B2B market for Meal Kits has experienced significant growth. On the other hand, Chinese consumers exhibit a low acceptance of the use of business-oriented meal kits in restaurants, with an ongoing and heated debate regarding the advantages and disadvantages of such meal kits in the foodservice industry. This study employed Mehrabian and Russell’s(1974) Stimulus-Organism-Response(S-O-R) model to investigate the impact of business-oriented meal kits, a novel stimulus, on consumers' emotional responses and behavioral intentions within the context of foodservice consumption, as well as the mediating effect of emotional responses. Data collection for this study involved an online survey of 212 consumers in China. The collected data was analyzed using R Studio program through independent samples frequency analysis, reliability and validity analysis, multiple regression analysis, and mediation analysis. The main findings are as follows. First, Chinese consumers rated the freshness and taste of meal kits relatively low, resulting in an overall low perceived quality. Chinese consumers also showed stronger negative emotional responses toward use of meal kits at restaurants. Second, perceived quality positively influenced positive emotional responses while negatively influencing negative emotional responses. Third, both positive and negative emotional responses significantly impacted behavioral intentions, whereas perceived quality did not have a direct effect on behavioral intentions. Fourth, both positive and negative emotional responses mediated the relationship between perceived quality and behavioral intentions. The academic implication of this study lies in its empirical analysis of how business-oriented meal kits, as a novel stimulus, affect consumers' emotional responses and behavioral intentions within foodservice consumption using the S-O-R model. From a practical perspective, the research findings offer valuable guidelines for manufacturers of meal kits and restaurants to enhance consumer acceptance and develop marketing strategies that align with consumer needs.
