Abstract
Despite the considerable representativeness and importance of kimchi cabbage as an ingredient in kimchi, the time when kimchi cabbage began to be used as an ingredient in kimchi has not yet been clearly identified. In Joseon Dynasty literature written in Chinese characters, kimchi cabbage was written as sung (菘) and baekchae(白菜), and among these, baekchae(白菜) was a term that simultaneously referred to both meowi and kimchi cabbage. This study comprehensively analyzed the citation relationship between Korean and Chinese literature, the characteristics of crop cultivation, and the principles of food preparation to prove that baekchae in Joseon Dynasty agricultural and food books was kimchi cabbage, not meowi. It was confirmed that the record in "Sanrimgyeongje", which had been the basis for the claim that "backchae = meowi", was a mistake. It was due to a lack of understanding of local Chinese crops and customs in the process of borrowing the contents of Chinese agricultural books "Sin Eun Ji" and "Han Jeong Rok". It was the result of confusion caused by the existence of a native plant with the same name, ‘meowi’, called ‘baekchae’. The errors in "Sanrimgyeongje" were subsequently carried over to the agricultural books of the late Joseon Dynasty that cited this book, and studies that misunderstood them literally have continued to this day. In addition, cabbage has the characteristic of being cultivated by transplanting seedlings that sprouted after sowing to fertile farmland. Due to the special nature of the leaf stem tissue, it requires multiple pickling processes. In contrast, meowi can be cultivated in the wild and is surrounded by tough cellulose, so the pickling method and eating form are different. As a result of the analysis based on the perspective focused on food , it was reconfirmed that the baekchae in the Joseon Dynasty’s agricultural and food books is kimchi cabbage, not meowi. Through this study, the confusion that ‘baekchae = meowi’ was corrected. In addition, the history and culture regarding cabbage, the time of its introduction, cultivation patterns, the manufacturing method of kimchi cabbage kimchi, and the time of its consumption were clearly revealed. In particular, it was confirmed that the ‘沈白菜’ in “Sangayorok”, which was about 300 years earlier than “Jeungbosanlimgyeongje”, which was previously considered the oldest record on kimchi cabbage kimchi, is the earliest record that deals with the manufacturing method of kimchi cabbage.
