20세기 전후 한글편지 물목에 나타난 식품 양상 고찰

Abstract

The purpose of this research is to understand the circulation patterns of foods and diet around the 20th century in letters that wrriten in korean. Food is divided into non-processed and processed foods, and again, non-processed foods were subdivided according to their ingredients and processed foods were subdivided according to their use. The unprocessed foods were subdivided into agricultural products, fishery products, and livestock products. In the case of agricultural products, grain and vegetables were diverse and distributed actively, but fruits were limited mainly to those offered at ancestral rites and were not actively distributed. In the case of fishery products, large quantities were distributed in various kinds, mainly seafood. In the case of livestock products, the variety was limited and the amount of distribution was not large. Processed foods were subdivided into convenient foods, snacks, beverages, seasonings, side dishes, ceremonial foods, and medicinal foods. Convenient foods and beverages are simple in type and distribution has not been activated. In particular, wheat cultivation has not been activated, and the supply of noodles has been insufficient. In the other hand, Snacks, seasonings, side dishes, and medicinal foods were varied and distributed in abundance. The ceremonial foods were mainly offerings placed on rites table, Ibaji, and se-chan.
