본 연구에서는 소비자들의 외식 횟수에 영향을 미치는 변수들에 대해 일차적으로 분석한 후, 다음 단계로 소득과 연령이 어떻게 상호작용하여 외식에 영향을 미치는가를 분석하였다. 식품소비행태조사 원자료를 이용한 1단계 분석 결과, ‘외식업체 음식의 안전에 대한 우려’는 통계적으로 유의하지 않는 것으로 나타났으며, 남성보다 여성인 경우, 연령이 높을수록, 그리고 일반 직장인보다는 가정주부나 학생, 군인 및 무직과 같은 기타직종 분류인 경우, 소득이 낮을수록, 가족 중 5세 이하의 자녀가 있는 경우, 또는 가족 내 환자가 있는 경우 상대적으로 외식 횟수가 낮은 것으로 나타났다. 2단계 분석을 위해 소득을 기준으로 전체자료를 정렬한 후 소득수준과 연령이 외식에 미치는 영향을 분석한 결과 각각 네 번과 두 번의 문턱효과가 있는 것을 발견하였으며, 연령을 기준으로 정렬한 후 연령과 소득수준이 외식에 미치는 영향을 분석한 결과 각각 한 번과 두 번의 문턱효과가 있는 것을 발견하였다. 이러한 구조변화 지점은 소득 기준 순서화의 경우 상대적으로 낮은 소득구간대에서, 연령을 기준으로 정렬한 경우 중장년에 해당되는 연령대에서 나타났다. 이는 기존문헌들이 암묵적으로 가정한 것처럼 외식에 영향을 미치는 설명변수의 계수들이 전 표본에 걸쳐 동일하다거나 혹은 구조변화가 있더라도 특정 독립변수의 평균이나 사분위수와 같은 인위적으로 구분한 지점에서 나타나지 않는다는 것을 제시하고 있다.
Abstract
The purposes of this study lie in two dimensions. First, we analyze whether frequencies of eating out are affected by consumers’ socio-economic variables and perceptions of food safety in restaurants. We further analyze an interaction between income and age in affecting frequencies of consumers’ eating out. The results show that perception of food safety in restaurants is not statistically significant. The frequencies of eating out were relatively lower, when other things are being equal, provided that the respondents are female, older, homemaker, student, soldier or they have a child under age five or a patient in their household member. Our analysis identifies four and two thresholds through income, respectively, in the regression of income and age on eating out and one and two thresholds through age, respectively, in the regression of age and income on eating out. This means that one needs to differentiate the whole samples into subgroups by income or age. In addition, our results show that the points of thresholds by income or age do not coincide with conventional points researchers have usually assumed such as arithmetic mean, quartile of income, or 10-year age cohort.
