외부음식의 안전성에 대한 우려와 집밥 섭취 횟수와의 관계: 가구형태를 중심으로

본 연구에서는 외식과 배달/테이크아웃을 포함한 외부음식의 안전성에 대한 불안감이 집밥 섭취 빈도에미치는 영향에 대해서 분석하였다. 종속변수는 가정 내에서 조리한 음식이나 도시락 섭취 빈도이며, 설명변수는 외부음식의 안전성에 대한 우려와 더불어 성별, 나이, 직업과 같은 인구통계변수와 건강에대한 관심 및 식품에 대한 태도 변수를 포함하였다. 또한 설명변수와 종속변수 간의 관계가 가구형태에의해 차이가 날 것으로 보고, 소비자들을 가구형태별로 그룹화한 후 재분석을 실시하였다. 조리 및식사장소별 식품안전에 대한 우려 정도에 대해서는 ‘배달 혹은 테이크아웃 음식’을 가장 우려하는 것으로나타났으며, 반대로 가장 우려가 적은 것은 ‘가정에서 조리한 음식’으로 나타났다. 전체 응답자를 대상으로한 추정 결과 외부음식의 안전에 대한 우려도가 높을수록 집밥의 식사 횟수가 늘어나는 것으로 나타났다. 응답자를 가구형태별로 구분하여 다시 분석한 결과, 맞벌이가구나 전업주부가구에서는 외부음식에 대한우려도가 높을수록 집밥 식사 횟수를 늘리는 것으로 나타났으나, 1인가구의 경우에는 우려가 높더라도구조적인 문제로 인하여 쉽게 집밥 횟수를 늘리지 못하는 것으로 나타났다.
Abstract
This study analyzes whether safety concern for food in restaurants or purchased outside affects frequency of eating home food. Dependent variable is the frequency of eating home-cooked food and explanatory variables include the safety concern, demographic characteristics, personal involvement to health, and life style related to food. We further analyze whether the effects of the concern differ depending on household type. We reclassified the whole sample into single households, dual-income households, and households with homemaker. Survey results show that S. Korean eat home food more at breakfast than at lunch or dinner. For lunch, they count more on restaurants and communal feeding. For the safety concern for outside food, they worry about ‘delivery/takeout’ the most among different sources, and they are relavtively less worry about home-cooked food. The estimation results show that if one has higher safety concern for outside food, then his/her frequency of eating home food was higher. Further, when we proceeded the estimation with differentiated samples based on household type, we have the same results for dual-income households and households with homemaker, but not for single households. Respondents in single households do not increase the frequency of eating home food although they worry about the safety of outside food, due to some reasons probably including limited time and/or feeling tiresome for preparing food ingredients and cooking.
