Just About Right, Check All That Apply method · 연구결과: 두 패널 모두 2종의 커피믹스 시료 가운데, 시료 A에 대한 종합기호도는 물론 향미와 커피맛에 대한 기호도가 유의하게 높았다.
Abstract
· Research topics: To investigate differences on the sensory preference and acceptability between Koreans and Southeast Asian muslim consumers using commercially available two coffee mix products. · Research background: Food preference can be affected from cultural background. · Differences from prior research: Few studies have identified the drivers of liking for coffee mix products containing ginseng or red ginseng extract in the Southeast Asian halal food market. · Research method: Sensory preference test, Just About Right (JAR), Check All That Apply(CATA) method · Research results: Among the two samples, sample A was highly favored for the overall liking as well as the aroma and coffee taste. The Southeast Asian panel prefered sample A for creamer taste, sweetness and bitter taste. ‘Good aroma’, ‘appropriate sweetness’ and ‘color’ of coffee mix products are liking attributes for distingushing quality, while ‘much to sweet’, ‘too simple flavor’, and ‘residual mouthfeel’ are major disliking attributes. · Contribution points and expected effects: In this study, quantitative sensory preference for coffee mix products was consistently found in terms of sensory intensity suitability and like/dislike attributes. It was found that controlling the sweetness intensity, aroma and color of coffee mix products containing ginseng or red ginseng could be very important for Southeast Asian halal food, so it can be used for future strategic product development.
