가정식생활 수첩 ‘가족밥상’을 활용한 초등학교 바른 식생활교육 프로그램 개발

Abstract

The purposes of this study were to develop and verify the effect of a dietary education program for elementary school students by using ‘Family Dining Table’ booklet, which was developed and distributed by the Ministry of Agriculture, Food and Rural Affairs as an education booklet for desirable dietary life. The dietary education program was developed by the following process. First, the elements of dietary education were collected based on the analysis of primary education curriculum, related books, previous articles, and children’s prior knowledge and behavior on food. And total 12 themes for dietary education were selected by the contents of ‘Family Dining Table’ booklet. For each theme, instruction goals, educational contents, and a detailed teaching and learning process were developed. The developed program was applied to a 3rd grade elementary class consisting of 24 students in Gangseo-gu, Seoul, by using the time of Student Club Activity in Creative Experiencing Activities from April to July 2014, and the educational effect was verified by comparing with the control class. The results obtained through this study are as follows: Firstly, a dietary education program for elementary school students utilizing ‘Family Dining Table’ booklet was developed successfully. The developed program focused on learners’ activity and consisted of 12 themes needed for dietary education for elementary school students by reflecting the three core values of ‘environment’, ‘health’, and ‘consideration’, and by using various educational materials. Secondly, the developed program showed significant increases in knowledge of environment, health, and consideration, as well as behavioral aspects of environment and health among students (p<0.001), proving its educational effects. Although the ‘Family Dining Table’ booklet contains useful information for students’ dietary education, it has not been utilized enough. Therefore, the program developed in this study could promote the dietary education using ‘Family dining table’ booklet. Further research is needed to develop ‘Family dining table’ booklets and programs for other grade levels.
