Abstract
This study analyzed and examined what kind of "fermented food" appeared in the proverbs of Korea and Japan and how people thought about "fermented food. The results are as follows. First, the description of alcohol appears most often in the case of "fermented drinks" in Korean-Japanese proverbs. The most significant difference is that in Korean proverbs, 'alcohol' is emphasized as a food to be careful of, but in Japanese proverbs, 'alcohol' is emphasized as 'classical style'. It is also fascinating to see "a hair of the dog (解酲酒)" and "drink alone (手酌)," which provide a glimpse of the unique culture of "alcohol" between the two countries. Second, 'Doenjang' and 'Miso (味噌)' appear most often as fermented soybean foods. First of all, 'Jang', which appears in the Korean proverb, is recognized as an important food that can influence the family's fortune. It is also considered a religious food associated with folk beliefs. On the other hand, the Japanese proverb "Jang" emphasizes the function of seasoning. A relatively large number of descriptions of various dishes made from "miso" appear, and the perception of it as a "healthy food" is emphasized. In particular, the effectiveness of "Natto (納豆)" is evaluated. This phenomenon is different from 'cheonggukjang', which is recognized as a trivial food in the Korean proverb. Finally, "kimchi" and "tsukemono (漬物)," which are "vegetable fermented foods," are recognized as important foods in people's diets. First of all, many descriptions of 'gimjang' culture, which represents Korean food culture, appear in Korean proverbs. Kimchi is also recognized as one of the foods influenced by folk beliefs. On the other hand, "tsukemono" in Japanese proverbs emphasizes color, smell, and efficacy, especially showing special interest and pride in "nuka-zuke (糠漬け)."
