Abstract
Temple kitchens in Buddhism are where the daily life of monks, whose mass offering(大衆供養) labor is considered a practice asceticism, takes place. This temple kitchen culture is beingpassed down as a precious intangible heritage that includes the characteristics of KoreanBuddhism and the universality of traditional culture. When they first join the sangha(僧伽), they live in postulants(行子) for more than 6 months. As they learn about the lives of the disciplinants(修行者), tasks, such as dish-washing orcooking, are bound to be the center of the day. When they finish their postulant life, they arerecognized as preliminary monks and have the basic qualities to raise mass offerings. They are responsible for making meals and side dishes while studying as students(學人) atthe monastic school(講院) for 4 years. They are also tasked with distributing food when theydo Baru-Gongyang(鉢盂供養), while the students who cook well become Byeoljwa (別座) andofficiate the offering(供養). Since they are scattered to various temples after graduating fromthe monastic school, the student life, which has experienced various tasks related to massoffering at the temple kitchens, has become a systematic basis for the transmission of templefood. After they are officially monks after receiving upasampada(具足戒, monastic ordinations), ifhaving more experience, they are assigned several tasks related to the housekeeping in templekitchens. If they are in a temple of scale, so that the successors do not feel uncomfortablepreparing for the mass offering, they leave behind 「Weonju Daily Log(院主日誌)」·「ChaegongDaily Log(菜供日誌)」. Therefore, the food culture of the temple continues without ceasing. During the An-geo(安居) period, they organize the Yongsangbang(龍象榜, a list of duties foran event at the temple), where monks from various places gathered, including those relatedto offering, and study by promoting discipline and harmony in public life. Furthermore, allmonks live their lives as disciplinants while working together in farming, and making kimchi andseasonal foods.
