초록
Polyphenol compounds from Korean sweet potatoes were analyzed and identified In this study. In addition, the polyphenol compounds contained in the leaves of Korean sweet potatoes were analyzed, Borami species using HPLC and LC-MS/MS. The six peaks were detected by examination of flavonoid compounds extracted from the leaves of sweet potatoes using 80% ethanol. These peaks were indentified as 3-caffeoylquinic acid, 5-caffeoylquinic acid, 4-caffeoylquinic acid,4,5-dicaffeoylquinic acid, 3,5-dicaffeoylquinic acid, and 3,4-dicaffeoylquinic acid by LC-MS and LC-MS/MS. The 5th peak, 3,5-dicaffeoylquinic acid was the most abundant among the identified 6 polyphenol compounds.
