초록
Korean pears, popular worldwide, show promising effects on various chronic illnesses and have significant potential as dietary supplements or medications due to their high phenolic content. This study aimed to determine the optimal conditions for extracting bioactive compounds and maximizing radical scavenging capacity from pear pomace using autoclave-assisted extraction and Response Surface Methodology (RSM). Using a central composite rotatable design (CCRD), the research examined how temperature (50 90°C), time (4 24 h), and solid-to-water ratio (0.8 2.4) affected brix, colorimetric parameters, total phenolic content (TPC), total flavonoid content (TFC), and antioxidant activity (ABTS and DPPH). Numerical optimization identified the ideal extraction parameters: 90°C temperature, 24-hour duration, and a 1.98 solid-to-water ratio. Under these optimal conditions, the following values were observed: 8.8±0.058% brix, 34.2 L*, 17.6 b*, 76.82±0.069 mg/g TPC, 2.498±0.003 mg/g TFC, 63.50±0.011% ABTS, and 73.17±0.001% DPPH. All independent variables significantly influenced the responses (p<0.05), highlighting the importance of the chosen extraction parameters in the optimization process. The results of this study suggest that optimizing extraction conditions can yield extracts with high levels of phenols and antioxidants from pear pomace, potentially benefiting both research and industrial applications.
