선사시대 사람들에게 豆類는 경제적 식물종이었다. 그들은 야생 두류를 활용하며 그에 대한 정보를 축적할 수 있었기 때문에 두류의 야생종을 순화하고 재배화 할 수 있었다. 고대 국가 성립 이후에도 이와 같은 두류의 생산과 활용은 촉진되었다. 먼저, 음식생활에서는 두류의 활용이 활발하였다. 질 좋은 두류의 소출은 고대인들의 식량문제를 해결하고 고대의 음식문화를 풍부하게 할 수 있었다고 생각된다. 또한 재배된 두류는 가축 사육을 증대하는 데에 활용될 수 있다. 牛耕이나 수렵 등에 활용되는 가축으로 고대인들은 식량생산을 늘리고 동물성 음식을 즐길 수 있는 기회를 마련할 수 있었다. 이러한 가축 사육에 있어 중요한 문제는 먹이 문제를 해결하는 것인데, 두류 재배를 통해 얻은 부산물을 가축 사료로 활용할 수 있었다. 두류의 재배는 다른 곡물의 생산량 증가에 도움을 주기도 했다. 두류 농사는 지력을 보충하는데 효과가 있다고 알려져 있다. 비옥한 토지에서 좀 더 많은 농작물의 생산을 기대할 수 있기 때문에 콩과 다른 작물과의 혼작은 장려되었다고 생각된다. 이와 같은 두류 재배와 활용은 선사시대부터 사람들이 생태환경을 이해하고 그것을 적극적으로 체계화한 성과라고 생각된다. 그 결과 고대인들은 두류를 활용하여 음식생활 및 농산물과 가축 사육의 증대 등에서 다면적 성과를 얻어냈음을 짐작할 수 있다.
Abstract
Pulse crops such as beans, red beans, etc. have belonged to 'economic plant species' since prehistoric times. People who used wild pulse crops as food crops in the New Stone Age systemized information about pulse crops and sought to make growing them possible. Pulse crops were grown through the stages from wild species to domesticated species and cultivated species. There has been a large increase in production and use of pulse crops cultivated like this since establishment of ancient countries. Grown pulse crops and their by-products were used for ancient people's food and their animal feed-stuffs, and helped increase crop productivity. Yielding quality pulse crops can not only solve people's food problems but enhance the flavor of food and raise nutritional quality. Lots of the foods which can be made using pulse crops such as 'ddeok' and various types of 'jang,' probably made their food life diverse. The major cattle such as cows, horses, etc. were able to be the important goods of ancient people. Through the cattle used to plow the fields or hunt, ancient people were able to create opportunities to increase food production and enjoy animal food. Supplying feed was an important problem for the livestock breeding, and the by-products obtained from the growth of pulse crops were able to be used for feed-stuffs. The amount of crops obtained from farming has relevance to fertility of soil as well. The reason is because a little higher increase in output is expected in the fertile land. One of the ways to solve it is to grow some crops together with beans in the same soil. Ancient people who supplemented fertility of soil through growing some crops together with beans were probably able to increase the amount of crops including beans. It is thought that growing pulse crops like this and using products obtained from it is what people achieved by having understood ecological environment and positively systemized it since prehistoric times. As a result, ancient people were able to get multilateral results in terms of food, agriculture, stockbreeding, etc. using pulse crops.
