초록

Amino acids are essential for maintaining human health. Spirulina Arthrospira platensis has attracted significant attention as a potential nutritional source because of its high protein content and abundance of essential amino acids. Through the present study, we investigated methods for efficiently extracting protein with high essential amino acid contents from spirulina. Physical treatment, enzymatic hydrolysis, and microbial hydrolysis were evaluated. Among the physical treatments, ultrasonication (UST) achieved the highest protein extraction yield (90.31±1.55%). In enzymatic hydrolysis, alcalase was the most effective enzyme, yielding 37.96±0.39% protein. In addition, microbial fermentation with Bacillus amyloliquefaciens MU2 resulted in a 60.35±2.10% protein extraction yield and significantly enhanced essential amino acid and branched-chain amino acid (BCAA) contents. Overall, this study contributes to the development of novel protein sources from A. platensis and provides fundamental data for industrial applications.
