전통주 통합 데이터 구축 - 한산 소곡주를 중심으로

최근 한류, 홈술 및 Covid-19와 같은 사회적 요인과 4차 산업혁명 기술 기반의 플랫폼과 같은 기술적 요인인 물론 국가의 정책적 노력에도 불구하고, 우리나라의 고유한 전통주의 인식 및 확산은 여전히 기대에 미치지 못하고 있다. 본 연구에서는 전통주의 재현 및 성분 분석 등 내재적 분석에 그치던 기존 연구에서 나아가서 국내외의 주류 플랫폼의 현황을 분석하였다. 또한 체계적인 관능 평가 및 제품 정보의 정량화를 통해 전통주의 통용 가능한 표준적 데이터 체계 구축을 위해 전통주 통합 데이터를 설계하고 정량화를 수행하였다. 전통주 통합 데이터를 구축하기 위해, 한산 소곡주를 지역 특산주 면허를 받아 생산하는 양조장 중 제품을 판매하고 있는 69개 양조장을 대상으로 92종의 한산 소곡주를 대상으로 전통주 통합 데이터를 선별하고, 6인의 전문가의 관능 데이터를 구축하였다. 해당 데이터는 추후 타 주종의 데이터를 보완하여, 공개할 예정이다. 본 연구는 전통주 산업의 활성화를 위해 특정 플랫폼의 주관적 평가에 그치는 전통주 맛 평가 데이터를 대체하고 일반에 통용 가능한 전통주 통합 데이터 구축의 기반 연구로써 활용될 수 있을 것으로 기대한다.
Abstract
Despite recent social factors such as the Korean wave, Drinking alone, Covid-19, and technological factors such as the platform based on the technology of the 4th Industrial Revolution, and policy factors such as the national strategy efforts, our recognition and spread of traditional liquors still fall short of expectations. Since previous researches were limited to intrinsic analysis such as the representation of traditional liquor and component analysis, in this study, We analyzed quantification data of the traditional online liquors retail platforms. To establish a standard data set that can use in traditional liquor through systematic sensory evaluation and quantification of product information. We have designed and quantified the integrated data of traditional liquors. To establish the integrated traditional liquors data, four experts tested the 69 breweries that produce Hansan Sogok liquors with a local special liquor license. We selected the integrated traditional liquor data from 91 Hansan Sogok liquors from the breweries that sell products by six experts. We will release this data after supplementing the data of other main types of traditional liquors. We expect this study to replace the taste evaluation data of traditional liquor, which is limited to subjective evaluation of a specific platform, revitalize the traditional liquor industry, and become a fundamental study to establish integrated traditional liquor data used for general purpose.
