The decline in rice consumption due to the increase in single-person households and the spread of westernized eating habits has led to an oversupply problem, increasing the need for alternative crops. Floury rice, a variety specialized for milling, is attracting attention as a potential substitute for wheat and as a means to enhance food self-sufficiency. In response, the Ministry of Agriculture, Food and Rural Affairs is actively promoting policies to expand floury rice cultivation and foster the processing industry. However, the participation of existing paddy farmers is essential for the successful expansion of floury rice cultivation. This study conducts a survey of paddy farmers to analyze their willingness to transition to floury rice cultivation and the factors influencing it. Using an ordered probit model, the study examines the effects of various factors and aims to provide foundational data for policy development and support measures to facilitate crop transition among paddy farmers.
