이 연구는 고교에서 조리과 교육을 담당하는 교사의 자격기준을 개발하여 새로운 교사 임용시험에 대비하고 교원 양성과정의 체계적인 개선 방향을 제시하기 위하여 수행되었다. 연구의 목적을 달성하기 위하여 국내외 교사 자격기준 관련 문헌을 분석하였으며, 작성된 조리과 교사 자격기준안의 타당성 검증을 위하여 현장 조리과 교사를 대상으로 설문조사를 실시하였다. 설문조사 결과를 토대로 교사양성기관 교수와 조리과 교사로 구성된 전문가 협의회, 세미나 및 공청회 등을 거쳐 조리과 교사 자격 기준을 개발하였다. 연구 결과 개발된 조리과 교사자격 기준은 전체 10개 영역(대범주), 11개 자격기준(중범주), 39개 세부자격기준(소범주)으로 개발되었다. 10개 영역(대범주)은 조리과 교사의 직무 수행 영역을 중심으로 교직의식함양, 학습자원관리, 학습자 이해, 교과지식, 교육과정 개발․운영, 수업능력, 학생평가, 학습환경조성, 산학협력, 전문성개발 영역으로 구성되었다. 조리과 교사 자격기준(중범주)은 총 11개로 개발하였으며, 이에 따른 세부자격기준(소범주)은 표시과목별 자격기준(중범주)당 3～5개를 개발하였다. 이 연구의 결과는 조리과 교사 임용시험의 개선과 조리과 양성기관의 교육과정 정상화를 위한 기초 자료로 활용될 수 있을 것이다.
Abstract
The purpose of this study was to develop the teaching standards for the culinary education in vocational high schools so that it could suggest a way to systematize the process of training the teachers and prepare them for the new certification examination. To accomplish this purpose, this study employed the research of domestic and foreign literature related to the qualifications for teachers and carried out a survey targeting the culinary teachers in order to verify the validity of the draft of standards for the teachers. Based on the result of this survey, this study developed the standards for the culinary teachers after an expert conference consisting of professors from training institutions and culinary teachers, a seminar and a public hearing. Teaching standards for culinary education were developed for 10 areas (main category), as were 11 teaching standards for culinary education (medium category), and 39 detailed teaching standards (subcategory). The 10 areas (main category), which for the most part revolved around culinary educators’ performance of their tasks, consisted of the cultivation of awareness of the teaching profession, management of learning-teaching resources, perception of learners, knowledge of the course materials, development and management of educational curriculums, teaching skills, student evaluation, establishment of learning environment, industry-academy cooperation, and the development of specialties. Teaching standards for culinary education (medium category) were developed in 11 categories and 3-5 detailed qualification standards (subcategory) were developed for each indicative subject. The results of this study could be utilized as a basic resource to improve the teacher certification examination and to normalize the curriculum from the training institute for culinary teachers.
