초록
The chemical components of essential oil easily change due to chemical reactions when the oils are exposed to heat, light and oxygen. Sensory evaluation is one of the methods to measure smell quality. Also, an electronic nose can be used complementarily in place of sensory test. In this work, 3 different essential oil were used which were stored at 4℃ and 50℃ temperature. The extracted oils were periodically tested using an electronic nose platform. The data obtained from the electronic nose were evaluated via principal component analysis(PCA). The oils stored at 4℃ indicated higher value than the oils stored at 50℃ temperature. Moreover, each essential oil exhibited a specific characteristic pattern in PCA according to storage conditions and period.
