Analysis of Research Trends on the Textured Vegetable Protein(TVP) Technology Using Topic Modeling

Purpose: The study focuses on the commercialization of textured vegetable protein (TVP) as a key solution to future food production challenges, particularly in addressing environmental sustainability, nutritional needs, and ethical concerns related to animal welfare. Research design, data and methodology: Through an integrated search on Google Scholar, academic papers with "TVP: Textured Vegetable Protein" as the main keyword were analyzed using text mining methodologies, including frequency analysis and topic modeling. Results: The analysis revealed a notable shift in research focus: since the 2020s, keywords related to TVP's texture, manufacturing processes, and commercialization technology have grown in prominence, while nutritional ingredient discussions have decreased. Topic modeling showed a transition from studying TVP as an experimental nutritional alternative before 2000 to its potential for market viability after 2000, and more recently, as a commercial product mimicking meat after 2020. Logit analysis further highlighted the increasing interest in the functional properties and ingredients of TVP patties. Conclusions: The study underscores the growing priority in reducing textural differences from meat and enhancing mass production processes, advocating for future research and policies to focus on these aspects in the industrialization of TVP.
