초록

This study was conducted to evaluate the level of microbial contamination in chicken meat sold in traditional markets in Incheon, Korea. A total of 103 chicken meat samples were collected from 25 vendors across 9 regions and subjected to microbial analysis. The samples were tested for total aerobic bacteria, Escherichia coli , and foodborne pathogens such as Salmonella spp., Campylobacter jejuni , and Campylobacter coli . Salmonella spp. were detected in 21 samples, and Campylobacter spp. were found in 13 samples. Among them, both C. coli and C. jejuni were simultaneously detected in 3 samples. These results indicate the need to establish and implement HACCP-based environmental hygiene management guidelines to control foodborne pathogens such as Salmonella spp. and Campylobacter spp. in chicken meats sold in traditional markets.
