초록
We examined the microbial communities present in various raw materials used for commercial seasoned jeotgal, including scallops, hair tails, whiparm octopus, Alaska pollock roe, oysters, squid and Alaska pollack guts; and commercial sikhae, including flatfish, Alaska pollack, squid, and bull-eye perch, purchased from markets in Korea. The statistical analysis of the microbial communities in the seasoned jeotgal and sikhae resulted in coverage of 0.99, confirming the accuracy of the analysis. The common dominant microbial species in seasoned jeotgal and sikhae were identified (Carnobacterium iners, Oceanobacillus luteolus, Trichocoleus caatingensis, Latilactobacillus graminis, Cobetia marina, Latilactobacillus sakei, Pseudescherichia vulneris and Aerosakkonema funiforme). Potamosiphon australiensis and Leuconostoc mesenteroides were detected in Alaska pollock; P. australiensis was also found in squid. Overall, the dominant species among the raw materials used in sikhae were consistent.
