식자재 영역은 주로 Business To Business(B2B) 영역에서 행하여지는 산업이다. 사람이 생활하는 가정 외에서 소비되는 식품영역을 식자재라 말할 수 있다. 사회활동을 하면서 외부에서 한, 두끼의 식품 소비는 누구나 하는 활동이다. 사람들의 생활에 아주 밀접하고 중요하기 때문에 식품을 공급하는 프로세스의 관리가 체계적으로 되어야 한다. 본 연구는 식품 콜드체인 배송차량의 적재 변수별 적정온도 도달에 미치는 영향을 분석하였다. 배송차량 적재 변화 요인별 법적인 냉장, 냉동의 준수온도에 도달하는 시간과의 관계를 분석하고 어떠한 영향을 미치는지에 대한 근거를 제시하였다. 연구 결과 배송 차량에 적재량, 적재중량, 적재 박수 수별 변수의 특성별 분석을 하였고, 연구 별과 유의미한 결과를 도출하였다. 본 연구의 결과는 식품 콜드체인 물류시스템의 효율적인 관리와 배송차량의 적재 최적화를 위한 중요한 근거를 제공하고자 한다.
Abstract
The food material sector is an industry mainly carried out in the B2B area. Food materials are the areas of food consumed outside the home where people live. It is an activity that everyone does outside for one or two meals while social activities. Because it is so close and important to people's lives, the management of the process of supplying food must be systematic. This study analyzed the effect of food cold chain delivery vehicles on reaching an appropriate temperature for each loading variable. The relationship between the legal refrigeration and freezing compliance temperature for each delivery vehicle loading variable was analyzed and the evidence for the effect was presented. As a result of the study, the characteristics of variables by load, weight, and number of loading applause in the delivery vehicle were analyzed, and significant results were derived from each study. The results of this study are intended to provide an important basis for efficient management of the food cold chain logistics system and optimization of the loading of delivery vehicles.
