Identification of Anthocyanins from a Black Soybean, Geomjeongkong 1

Abstract
Three anthocyanins were isolated from the acidified ethanol extract of black soybeans (Glycine max M. cv. Geomjeongkong 1) using preparative high-performance liquid chromatography. The anthocyanins were characterized as delphinidin 3-glucoside (D3G), cyanidin 3-glucoside (C3G), and petunidin 3-glucoside (Pt3G) by means of chemical and spectroscopic methods. The content of anthocyanins, D3G, C3G, and Pt3G from 5 colored soybeans were evaluated. Among them, C3G content ranged from 0 to 143 mg/100 g seed coat and D3G ranged from 0 to 4.7 mg/100 g seed coat, while Pt3G was not detected in tested varieties.
