초록

Ginsenoside Rd, a rare compound, is an ingredient that has recently received significant attention as a cosmetic functional compound. However, the natural concentration of ginsenoside Rd in the extract is much lower compared with that of the major ginsenoside compounds, and synthesis of ginsenoside Rd is difficult due to its complex structure. In this study, preparation of Ginsenoside Rd was performed using enzymatic bioconversion of Steamed Ginseng Crude Saponin (SGCS) for industrial use. One glycosidic residue was simultaneously removed from each of ginsenoside Rb1, Rb2, and Rc in SGCS by xylanase from Tricoderma viride with conversion of ginsenoside Rd. Bioconversion optimization of SGCS to ginsenoside Rd was performed using Box-Behnken design (BBD). The main independent variables were substrate concentration, reaction time, and temperature, and 15 reaction conditions were selected according to the BBD model. The optimum reaction conditions were confirmed at a substrate concentration of 1.5%, temperature of 64℃, reaction time of 6 h, and a conversion rate of 53.29% using RSM.
