Abstract

This experiment was conducted to observe the effects of fibrolytic enzyme (FE) inclusion ongrowth performance and carcass characteristics in early and late fattening phase of Hanwoosteers. Early (n=54, 17 month of age, 397.4±27.2 kg initial body weight) and late (n=54, 23month of age, 525.2±47.4 kg initial body weight) fattening phase of Hanwoo steers wereconventional separate fed a concentrate diet and rice straw bale for 8 month. The dietarytreatments were randomly assigned into three treatment groups, three replicates, six heads pereach early and late fattening phase by complete block design. Experimental groups were earlyfattening phase; basal diet (control), basal diet + 0.05% FE (E0.05), basal diet + 0.15% FE (E0.15) and late phase; basal diet (control), basal diet + 0.05% FE (L0.05), basal diet + 0.15%FE (L0.15). Meat grade was estimated by the Korean carcass grading system. Concentrate andtotal DM intakes of late fattening phase of Hanwoo steers were significantly higher in thecontrol and L0.15 than in the L0.05 (p<0.001). However, average daily gain and feed efficiencywere not affected by the FE inclusion. Fat color was higher in the L0.05 and L0.15 (2.89) thanin the control (2.50) (p<0.01). The results obtained from this study demonstrate that FEadditives had no effect on average daily gain and feed efficiency. Enzyme activities and optimal
