Abstract

This study was to evaluate the relationships among the carcass traits of Hanwoo steers. Thetraits evaluated at the time of carcass grading were cold carcass weight(CWT), back fatthickness(BFT), eye muscle area(EMA), marbling score(MAR) and lean yield index(MINDEX). The traits measured after retail cut processing were lean meat weight and percentage(LEAN, and%LEAN), trimmable fat weight and percentage(FAT and %FAT), and trimmed bone weight andpercentage(BONE and %BONE). Carcass data of 3,926 Hanwoo steers slaughtered from 2010 to2012 were collected from Hongcheon county of Kangwon province. Mean slaughter age andcarcass weight were 952.53 day and 454.58㎏ respectively and mean retail cut percentage, fat and bone percentage were 61.69, 26.54 and 11.77%, respectively. CWT was positively correlatedwith LEAN, FAT, BONE and %FAT while negatively correlated with %LEAN and %BONE. BFT showed negative correlations with %LEAN and positive correlation with %FAT. EMAshowed positive correlations with LEAN and %LEAN. The correlation coefficients of MARwere insignificant and low of -0.01 with %LEAN and significant but low of +0.04 with %FAT. MINDEX was correlated positively with %LEAN and negatively with %FAT and thosecorrelation coefficients were comparatively large of +0.51 and -0.57, respectively. Consideringthe magnitude of correlation coefficients, CWT among the five carcass grading traits might bethe most important traits for the variations of LEAN, FAT, and BONE. And MINDEX mightbe the most important trait for the variations of %LEAN and %FAT. Simple linear regressioncoefficient of LEAN and FAT on CWT were +0.562 and +0.364㎏, respectively. Those of%LEAN and %FAT on MINDEX were +0.341% and -0.445%. These results suggest thatincrease of 1㎏ in CWT might be associated with the increase of 0.562㎏ and 0.364㎏ forLEAN and FAT. And the increase of 0.341% for %LEAN and the decrease of 0.445% for%FAT might be expected as the 1% increase of MINDEX.
